Delicious Pumpkin Cookie Recipe

These pumpkin cookies are out of this world! I saw this recipe on Pinterest and me and my Mom decided to give it a try! We decided to do our own version of the Icing, and it turned out so good. Hope you enjoy!

Ingredients for the cookies:

2 cups butter, softened
2 cups granulated sugar
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
2 eggs
2 teaspoons vanilla
1 15-ounce can pumpkin
4 cups all-purpose flour


Ingredients for the icing

8 ounce cream cheese

1/2 cup softened butter

2 teaspoon vanilla (I used a vanilla bean paste by Nielsen Massey, my Mom says it’s the best!)

3 3/4 to 4 cups powdered sugar


Directions: 

Preheat your oven to 350 degrees. In a large bowl, beat butter with an electric mixture. Add your sugar, baking powder, baking soda, cinnamon, salt, nutmeg. Beat until it’s all combined. Then, beat in your eggs and vanilla, beat in your pumpkin, then beat in as much of the flour as you can with the mixture. If necessary, you can stir the remaining flour in with a wooden spoon.

Drop dough with a spoon onto an ungreased cookie sheet. Make sure they’re at least two inches apart. Bake for 10-12 minutes. Transfer onto wire racks to cool.

Directions for icing:

Add your cream cheese, softened butter, and vanilla into a mixing bowl. Start mixing, and then slowly add in your powdered sugar until fully smooth.
